Here at For All Things Good we are frequently changing which types of corn we use. in an effort to continue to learn about all the incredible diversity heirloom corn has to offer we rotate through three selections at a time. We will always offer one blue corn varietal, one yellow corn varietal and then either a red or a purple corn. bellow is a list of (almost) all of the corn we have served since opening. We hope to update this page as often as possible. You can also find more information about what corn we use and what corn is available directly from the suppliers we use, Masienda and Tamoa.

 

Bolita Amarillo

 
 

Bolita Amarillo

This yellow corn comes from the central valleys of Oaxaca. It has a dense starch that is excellent for large tortillas, think tlayudas or in our case tlayuditas! We love it for it’s fragrant aromas when cooked on the comal and complex flavors. We use it frequently for our tlayuditas and tortillas

 

Conico Azul

 
 

Cónico Azul

This blue corn, our favorite of the blue varieties, comes from Jocotitlán in Mexico State. We love it for its rich blue color and the subtle earth tones it has in taste. We use it frequently for our retail tortillas, masa, our blue corn quesadillas and our memelas though the applications are endless!

 

Bolita Belatove

 
 

Bolita Belatove

This rare red variety of corn comes from central valleys of Oaxaca. (At one point this corn was thought to be close to extinction!) We love it because of its beautiful earthy red color and rich nutty taste. We often use this corn for our hibiscus tetelas, special tortillas and tostadas!

 

Chalqueño Azul

Chalqueño Azul - This blue variety comes from Tlaxcala State in central Mexico. It is a corn with a soft starch that makes for beautiful, soft tortillas. We love it for it’s cosmic blue color and rich flavor. We use it on occasion for our tortillas, memelas and quesadillas!

Conico Amarillo

This beautiful yellow corn comes from the highlands of mexico state. We love it for its soft starches and easy on the eyes hue of golden yellow. It produces a fluffy tortilla that is perfect for tacos and quesadillas or just alone with some salt and salsa macha!

 

Tuxpeño Rojo

 
 

Tuxpeño Rojo

This beautiful red corn comes from Oaxaca. Like other tuxpeño varieties it produces a deeply colorful tortilla, in this case a rich chocolate red brown. We love it for it’s intense color and flavor. We use it occasionally for our special tortillas, volcanes, and tlayuditas!

This starchy blue corn comes from Central Oaxaca. It is commonly used for larger tortillas such as Tlayudas and Quesadillas as the dense starches lend to durable tortillas. We also love it for it’s earthy profile and beautiful blue gray color! We use this corn on occasion for our tortillas, tlayuditas and quesadillas!

 

Olotillo Morado

 
 

OLOTILLO MORADO

THIS PURPLE CORN COMES FROM THE COASTAL REGION OF OAXACA. IT HAS A BEAUTIFUL PURPLE COLOR AND MAKES FOR A VERY LIGHT, AIRY TORTILLA. WE LOVE TO USE IT FOR OUR HIBISCUS TETELAS, TOSTADAS AS WELL AS FOR PURPLE TORTILLAS FOR SALE ON OCCASION IN THE SHOP.
